Little wonder of Moroccan street food. Moroccan fritters are crunchy outside and soft intside, just like a pastry.
The dough is prepared the day before and let stand overnight to leaven. The donuts "Chfenj" are then fried at the customer's order. They are very hot when they are served, with the indispensable glass of tea.

You can find it only from the craftsman Chefnaj (craftsman specialized in making and selling donuts) of the neighborhood. You can buy them by unit or by weight (for families' beakfast at home like sunday morning for example).
